Lunchbox Cafe sits in downtown Ellensburg offering healthy breakfast and lunch options including salads, soups, sandwiches, smoothies and much more. As a strong supporter of the Ellensburg community, owner Margo Cordner and the rest of the Lunchbox team joined the Terravine Growers CSA program in 2019. Read on to learn more about Margo, Lunchbox, and their experience with the Terravine Growers CSA:
Q: How long have you been a Terravine Growers CSA customer?
Margo: We started receiving our CSA produce this June.
Q: What made you join the Terravine Growers CSA Program?
Margo: I like the idea of supporting others in our community who are doing positive things.
Q: What is your favorite vegetable?
Margo: I really love avocados. Too bad they aren’t a crop that grows in Washington! Heirloom tomatoes are another favorite.
Q: What is one of your favorite dishes that you have made with Terravine produce?
Margo: At home I’ve been making a pasta dish with the beautiful rainbow chard, garlic, olive oil, chili flakes, and toasted bread crumbs. At the Lunchbox we’ve been making a variety of tasty and colorful slaws. I really like the ones with kohlrabi. That’s a vegetable I had never eaten or cooked with until receiving our Terravine Growers CSA boxes.
Q: When did Lunchbox Cafe open?
Margo: The Lunchbox Cafe was started in April of 2012 by Roz and Dan Eldrige. I started working for them in 2013 and then bought the cafe in June of 2016.
Q: Why was Lunchbox Cafe started here in Ellensburg?
Margo: It seemed like there was a need for more vegan, vegetarian, and gluten free restaurant items in Ellensburg and the Lunchbox was started to help fill that need as well as providing fast, healthy options for the community.
Q: What is on the menu at Lunchbox Cafe?
Margo: We serve sandwiches, salads, smoothies, breakfast items, baked goods, and coffee.
Q: What is your favorite thing about being the owner of Lunchbox Cafe?
Margo: That’s easy – definitely the customers. We are blessed to have the best, kindest, and most supportive customers. We also love it when they bring their pets with them.
Q: Have customers enjoyed the dishes you have made with Terravine produce?
Margo: The response to our CSA Salads has been very enthusiastic. We always sell out.
Q: How can we improve your experience as a CSA member?
Margo: So far it’s been nothing but positive.
