Spring vegetables are some of the season’s most delicious. Radishes, turnips, carrots, kohlrabi, and beets are often some of the first signs that the local season for produce has begun. Here at Terravine Growers we are harvesting all of your late spring favorites.
What some folks don’t know is that the greens that often come with radishes, turnips, carrots, kohlrabi and beets are not only edible but also super delicious! As farmers, we love when we can get more than one use out of a single vegetable. Read along to learn how to utilize those greens and get even more from your CSA box this season!
- Radish and turnip greens have a slight spiciness and bite much like their bulbous roots do. Thus, they are great to saute with a bit of garlic (see last week’s featured recipe here) or you can blitz them in your food processor with olive oil,garlic, lemon juice, fresh herbs and cheese to make a great spring pesto.
- Beet and Kohlrabi Greens are hearty and flavorful, much like their cousins Swiss chard and kale respectively. So, save those beet and kohlrabi greens and use them as you would chard or kale – saute, chopped for a salad, add them to soups, mixed in to frittatas or omelets, really the sky is the limit!
- Carrot tops have an herbaceous quality to them, somewhat similar to parsley. Pulse your carrot tops in a food processor with herbs, olive oil, lemon juice and garlic to make a pesto or add them to a soup or stock to add flavor and depth.
