 ½ cup extra virgin olive oil
 ½ cup balsamic vinegar
 2 tsp dijon mustard
 1 clove garlic or garlic scape, finely minced
 1 tbsp honey
 salt and pepper, to taste
Ginger Sesame Dressing
  cup extra virgin olive oil
 2 tbsp toasted sesame oil
 ¼ cup rice vinegar
 1 clove garlic or garlic scape, finely minced
 2 tbsp soy sauce
 1 tbsp honey
 2 tbsp grated fresh ginger

For the creamy carrot top cilantro dressing, combine all of the ingredients in a food processor or blender and blend until smooth. Slowly add additional water if needed to achieve desired consistency. Season with salt and pepper to desired taste. Refrigerate for at least 30 minutes. Store in a jar with a tight fitting lid.
