Janice’s Terravine Stir Fry

 1 Onion, diced
 1 Head of Broccoli, roughly chopped
 1 Head of Cauliflower, roughly chopped
 2 Zucchinis and/or Summer Squash, sliced into half moons
 4 Carrots, shredded or sliced
 2 cups Cabbage, sliced
 1 cup Snap Peas, cut in thirds
 3 tbsp Avocado or Olive Oil
 2 cups Cooked Brown Rice
 ¼ cup Teriyaki Sauce
 Salt and Pepper, to taste
 1 Hot Pepper, finely diced (optional)

Prepare your vegetables and cook rice according to package instructions.

Heat avocado or olive oil in a large frying pan over medium to medium-high heat.

Add onions to pan and cook until slightly softened, about 3-5 minutes.

Add broccoli and cauliflower to the pan and cook for about 3-5 minutes.

Stir in carrots, zucchini, snap peas and hot peppers (if using) and cook for about 5 minutes.

Stir in chopped cabbage and cook until slightly wilted.

Turn heat up to high and mix in cooked rice and 1/4 teriyaki sauce. Stir fry for about a minute. Vegetables should be tender. Season with salt and pepper, to taste.

Garnish with toasted sesame seeds, scallions, and/or red pepper flakes as desired. Serve and enjoy!
