Pumpkin Chocolate Chip Bread

Yields1 Serving
 2 cups all-purpose flour
 1 tsp ground cinnamon
 1 tsp baking soda
 ½ tsp baking powder
 ½ tsp salt
 ½ tsp ground ginger
 ¼ tsp ground nutmeg
 ½ cup melted butter (1 stick)
 1 ¼ cups granulated sugar
 1 cup pumpkin puree
 ¼ cup sour cream
 2 large eggs
 1 tsp pure vanilla extract
 1 ¼ cups mini chocolate chips

Preheat the oven to 350 degrees. Line a 8" x 4" loaf pan with parchment paper and grease.

In a large mixing bowl, whisk together flour, cinnamon, baking soda, baking powder, salt, ginger, and nutmeg.

In a different large bowl, use a hand mixer and beat melted butter, sugar, pumpkin puree, sour cream, eggs and vanilla.

Add the dry ingredients to the wet ingredients gradually until just combined.

Fold in the chocolate chips, saving 2 tablespoons of chocolate chips for topping the loaf.

Transfer the batter to the prepared loaf pan. Smooth the mixture in the pan with a spatula and sprinkle with the reserved chocolate chips.

Bake for about an hour and 15 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

**If the top of the loaf begins to get dark, cover with an aluminum foil tent to avoid further browning.

Let cool for 15 minutes, remove from the pan, and slice.
